One of the major milestones Paul shared was hiring a dedicated Quality Manager with a master's degree in food science from Cornell University. For a growing entrepreneur, spending money on a role that doesn't immediately generate revenue can be difficult to justify.
"It's always hard to invest in something when the ROI isn't obvious... but it's more of a long-term look. You're looking at the overarching long-term product that we are delivering."
As Craft Cannery prepares for its first USDA organic audit, having a specialist to write standard operating procedures (SOPs) and manage compliance has been a game-changer. Paul explained that as a business grows, the founder can no longer muscle through every process—systems must replace sheer effort.
Lessons Learned from Past Employers
Reflecting on his time in radio before taking his sauce business full-time, Paul opened up about the frustrations of poor management and lack of transparency. He recounted times when he was promised opportunities that never materialized, feeling like Charlie Brown having the football pulled away.
Those experiences fundamentally shaped his leadership style today. He now prioritizes clear communication with his team.
"I want regular schedules with them. What is the path that you hope to be on? Are we realistically on that path? I owe them that transparency."
By avoiding the "dangling carrot" approach, Paul works to build a culture of trust rather than one of resentment.
The Value of a Mentor and Focus
A pivotal moment in Paul's journey was meeting his business partner and mentor, Tom. With a rich background in the food and beverage industry—including early equity in Vitaminwater—Tom provided guidance that kept Paul focused.
Paul shared a story about wanting to launch a nationwide promotional tour early in his business. Tom quickly shut the idea down, emphasizing the need to master one core competency first.
"You have to get good at one thing. Become excellent at this one thing. And if you can become excellent at this one thing and you are solving a problem... you're set."
Philanthropy and Community Connection
Despite his busy schedule running multiple ventures, Paul remains deeply involved in the Rochester community. He serves on several boards, including the Rochester Broadway Theater League and Big Brothers Big Sisters, and recently finished his term as president of the Rochester Rotary.
He and the hosts agreed that philanthropy isn't just about giving back; it's also about building relationships and social capital. In business, delivering results and maintaining strong relationships are the two pillars of success.
Advice for Aspiring Entrepreneurs
When speaking to young entrepreneurs, Paul always addresses the fear of "not being smart enough" or having an idea that isn't "good enough." His advice is straightforward: you don't need to invent a brand new technology.
"You do not have to create the most innovative thing... Just solve a problem."
